As a data point, I still have occasion to use my Quadra 700, which runs MacOS 7.5.3. I've been meaning to upgrade it for the last year or so, but haven't gotten around to it, since, for what I use it for (mostly telnetting to a Linux box and doing a little web surfing), it's still adequate.
